The Sunday Supper Club | Pasta Salad

Ditalini Pasta Salad

Happy Sunday Friends! I’m excited to be back for another round of The Sunday Supper Club. And WOW, have things changed dramatically for all of us the past few weeks, and I’m hoping all of you are first and most importantly, well in health! For those of you new around her, the Sunday Supper Club was started at the beginning of the year as “relaxed, casual meal inspiration to get you and me back into the kitchen”. Seeing that most, if not all of us are now confined to our kitchens, I thought once again it worthwhile for our series to reboot. Again, these are the real meals I’m serving up each week to my family (and the real ingredients I can get my hands on). Nothing fancy, and no experts here. These are recipes you know, or things you’ve been meaning to try, or possibly good starts to help you determine what you can make with what you’ve currently got! My goal is to help inspire you throughout this very challenging and unprecedented time, proving that if I can still create healthy meals that everyone in my family likes, then you can too!

So, to kick things off…Pasta Salad!

Ditalini Pasata Salad

With meat and most dairy being non-existent at my local grocery stores, the past week, we’ve been getting creative with the items we have on hand. And what better to make during warm weather, than a cold, veggie packed pasta salad! So versatile, and so many substitution options, the hardest part will be not devouring the whole bowl!

Pasta Salad Ingredients

What You Need

  • Pasta ~ Any will do, Ditalini Pasta Shown Above

  • Veggies ~ again, so many options here, grab what you have, frozen, canned or fresh! I used cucumber, tomatoes, sweet peppers, & quick pickled red onions (just soaked in lemon juice)

  • Dressing ~ again, use what you’ve got. Olive Oil & Lemon Juice…Italian Dressing…Even a Creamy Ranch Dressing Would Work. We opted for olive oil, lemon juice and a touch of balsamic vinegar.

  • Bonus Items…Cheese, we used Feta…mozzarella, Parmesan among other would work…fresh herbs (you know I grow them…I used oregano, dill & tarragon)

Pasta Salad Ingredients

To Make

  • Cook Pasta According to Package, then either let cool completely, or place in an ice bath to speed the process

  • Finely chop veggies and mix with pasta in a large bowl

  • Pour over with your choice dressing and top with fresh herbs and/or extra lemon juice!
